Farina Pie


Farina Pie

Farina is the dried starch of the Cassava.  It must be soaked before using.

1 lb. Farina
½ lb butter
6 eggs
1 ½ cups sugar
1 level tablespoon salt
¾ tin evaporated milk (about 9 ozs)
2 lbs cooked chicken
½ cup chicken broth

Damp the Farina with evaporated milk and  2 cups of water.  Let stand for 2 or more hours.  Prepare the Farina pie the same as the Cassava pie.

Cream butter and sugar with hands.
Add eggs and seasoning; and mix well.
Grease pan 13 x 9 x 4.
Pat mixture in bottom of pan and sides.
Put in filling – moisten with liquid.
Cover with remaining farina.
Make small hole in center.
Bake 300 degrees for 3 hours.

Cassava Pie


Cassava Pie

4 lbs cassava
¾ lb butter
2 cups sugar
1 doz eggs well beaten
4 tsp nutmeg
1 tbsp salt
1 tsp vanilla

Filling

3 lbs cut up frying chicken
1 lb lean cubed pork
Thyme and salt
Boil for 1½ hours.
Save liquid.
De-bone chicken and cut in cubes.

Squeeze cassava.
Cream butter and sugar with hands.
Add eggs and seasoning and mix well.
Grease pan 13 x 9 x 4.
Pat mixture in bottom of pan and sides.
Put in filling – moisten with liquid.
Cover with remaining cassava.
Make small hole in center.
Bake 300 degrees for 3 hours.

Banana Bread


Banana Bread

½ cup butter
1 cup sugar
2 eggs, beater
1 ¼ cups mashed banana
2 cups sifted flour
1 tsp baking soda
1 tsp salt
½ cup chopped nuts
½ tsp vanilla

Cream butter and sugar
Add beaten eggs – mashed bananas
Add dry ingredients
Stir in nuts
Bake 325 degrees for 60 mins.

Hop N John (Peas and Rice)


Hop N John  (Peas and Rice)

1 pig’s tail or salt pork
6 slices chopped bacon
½ lb black eyed peas
5 cups water
Thyme
Portuguese sausage sliced
2 Bermuda onions chopped
1 cup regular raw rice

Soak peas and pig’s tail in water overnight.
Drain and rinse.
Place in pot with 5 cups water.
Cover and boil gently 15 mins.
Fry onion, bacon and sausage until brown.
Add to pot with thyme.
Cook 45 mins.
Add rice.
Season to taste.
Cook 30 mins longer.
Remove pig’s tail and serve hot.

Cod Fish And Banana Breakfast


Cod Fish and Banana Breakfast

2 lbs salt cod
2 cups white sauce
6 eggs
½ tsp mustard
1 tsp Worcestershire sauce
2 small boiled potatoes

Soak cod in water overnight.
Change water several times.
Bring almost to boil.
Pour off water and rinse.
Cover with water and simmer 20 mins.
Boil potatoes.
Cook eggs.
Make white sauce and add chopped eggs, mustard and Worcestershire sauce.
Serve codfish, bananas, egg sauce and potatoes.

Mussel Pie

Mussel Pie

2 qts shelled mussels
2 lbs potatoes
1 lb onions
½ cup carrots
Parsley
2 tbsp thyme
2 tbsp Worcestershire sauce
2 tbsp curry powder
Gravy

Clean and rinse mussels.
Chop all finely.
Put mixture in pressure cooker with seasoning and ½ cup water.
Pressure cook 20 mins.
Thicken to slew consistency.
Make pastry.
Make as you would a pie with top.
Bake 450 degrees 10 mins.
350 degrees 30 mins more.

Sweet Potato Pudding


Sweet Potato Pudding

Two 1lb. 1oz tins sweet potatoes mashed

Add:

1 tsp salt
½ cup melted butter
2 tsp cinnamon
½ tsp nutmeg
1 tsp allspice
¼ tsp salt
2 tsp baking powder

Beat 6 egg yolks with 1 2/3 cups sugar until thick.
Add to above ingredients.
Add 1 lb. raisins coated with ½ cup sugar.
Bake in 2 pans 13 x 10 slightly greased.
Bake 350 degrees 50-60 mins.
